I'm not at all an expert on this but here is what I can advice:
Garmin Mobile XT is very finicky when run on WinCE. But there are mods that do run.
First you'll need to look in your device's explorer and see how it names your SDCARD. This is often SDMMC but it may be different.
Then search for a GMXT version that is intended for WinCE6. One of the files there would be garmin.mscr or such. Open this in notepad and look for the paths to the SD Card (example: "\SDMMC\Garmin\RunGMXT\TaskbarToggle.exe" and "\SDMMC\Garmin\Apps\WM\que.exe") and correct them to reflect the name of your SD Card. If it's called SDMMC, you can leave the paths alone.
Also, since your device is 7", it must be wvga, so google for the Garmin XT version modded by downunder. I'm using this now on my 6" WinCE PNA and works quite well.
I also have a Chinese unit installed in my 2008 Toyota Camry SE, running Windows CE 6.0 and just got Garmin Mobile XT fully functional and working WITH 2014 North American Maps working like a champ! Here are some pics of the unit:
